OUR FISH

Fishing has been at the heart of Newhaven for over 500 years. Much has changed, but the Fishmarket is still active today with an established network of traders who are keeping traditions alive. In the cobbled streets of the village, the same names have dominated the community for generations, including Welch Fishmongers.

This family run business supplies local people as well as some of the finest restaurants in Edinburgh. Long established bonds with Scotland’s skippers gives proprietor, Gary Welch access to some of the finest fish caught in Scottish waters and beyond.

COD, HADDOCK & SUSTAINABILITY

We all have a responsibility to look after our oceans.

Haddock and Cod are firm favourites in every fish and chip shop in the land but we need to balance popularity with sustainability.

Our fish is all responsibly sourced from sustainable stocks and we are committed to playing our part in marine conservation. After all, it is the future of our business.
From local lobster and crab boats to mighty creeled langoustines from Tobermory, hand-dived scallops from Mull and cockles, clams and razors gathered from up and down the east coast, Welch Fishmongers uses its decades of experience and specialist contacts to source the very best Scotland has to offer.

Then it is over to the skill of the team, filleting the fish and preparing the seafood using skills passed down from generation to generation.

ECO-FRIENDLY

At The Fishmarket we enjoy the best the sea has to offer, so it’s only right we do all
we can to look after the land and ocean around us. We work hard to make sure our packaging is environmentally friendly - our takeaway boxes and saucepots are all made of a natural, biodegradable material and we only use paper straws to keep our
plastic usage to a minimum.
