You’ll be working with the finest, freshest produce available and be supported
by a highly qualified team with over 30 years experience in the industry… and
the view out across the harbour and the River Forth is not too shabby either!
With a wealth of experience gained from almost a decade working at Ondine,
Head Chef Ishu Mehrotra, leads the kitchen team. From oyster shucking, to fish filleting, to preparing crab, the unique opportunities here will allow you to perfect
your skills and techniques working with the best seafood there is.

Steeped in history, the Newhaven fish market dates back to 1896, where it was once crammed with fishwives picking up freshly caught fish to sell to the locals. Times may have moved on, but the heart of Newhaven remains firmly with the finest of seafood, and The Fishmarket is going to make sure that continues for years to come.
